Hey, here are a few things that might be useful:
When you say hello to a teacher, you say "老师好"
只要 is not how you say "only want", which is what I think you want to say. 只要 is used to mean "only whenever" or "only by" when used in grammar patterns with 才. 例句:只要努力学习才会成功 - only by studying hard can you succeed. Sometimes this 只要 is ommited. You want to say 只想. Generally, 想 is a better translation for "I want to". They way you say "what I want to say is___" is “我想说的就是___".
Teachers are usually referred to with the measure word 位 or 名, both of which are more polite
You say that she's "too amiable", whicih is a bit off. 和气 is a better translation for "friendly", and usally you say 很 before an adjevtive.
A 女孩儿 is a small female child... I doubt your teacher is a kid!
喜欢 is "to like". Your last sentence reads "I want to you classes”.

I have just recently completed my Chinese classes. This is a letter to my Chinese teacher, telling her that she's kind and thanking her for her help/lessons. I welcome any corrections and advice with this letter.
