When do we use 하는 것 instead of the noun itself?
For example
수영 and 수영하는 것
so should I say '저는 수영를 좋아해요' or '저는 수영하는 것을 좋아해요'?
'제 취미는 수영이에요' or '제 취미는 수영하는 게예요'?

We use '하는 것' when we want to change verb to noun.
It's like gerund in English language.
So, '수영' is a noun, '수영하다' is a verb, '수영하는 것' is a noun(gerund).
You can say both '저는 수영을 좋아해요' and '저는 수영하는 것을 좋아해요'.
And also can say '제 취미는 수영이에요', '제 취미는 수영하는 것이에요'.
