What does 'not holding someone's alcohol well' mean here?
▪ We thought maybe he was drunk and didn't hold his alcohol well.

Someone who can drink a lot without acting drunk "holds their alcohol well." Someone who drinks only a little, but acts drunk anyway, "doesn't hold their alcohol well."

"NOT HOLDING someone's alcohol well" means that someone gets DRUNK very easily when he drinks alcoholic beverages.
and
"HOLDING someone's alcohol well" means that someone does NOT look DRUNK even if he drinks alcohol.
