"We are a company specializing in..." is more common.
Another option could be: "We are a company that specializes in..."

Both forms are adjectives describing the company. The ing form suggests a continuous on going process, so I think it's preferable.

There isn't really much difference in meaning between specialized and specializing, but I would use specializing with the present tense and specialized with the past tense.
