Hi! it's really good question! Other teachers already answered, the translation is a bit difference depends on what kind of water it is. Omizu is general one and Sayu or Oyu is warm/hot water. These are others; I hope you will enjoy Japanese Vocabulary😊✨
Nansui: Soft water
Kousui: Hard water
Tansansui: Sparkling water
Suidou sui: Tap water
Still water: Futsuu-no mizu

However, if you want to be more polite, you can say “ O- mi zu.

Just cold water お水 (おみず) or 水 (みず)
Warm or hot water お湯 (おゆ)
Ordering cold water at a restaurant お冷 (おひや)
