What does "the days had folded one into another" mean?

It means that the person is having a hard time distinguishing what happened on which day. When you do the same thing every day, Monday is the same as Tuesday, Tuesday is the same as Wednesday, Wednesday is the same as Thursday, etc. It's hard to remember whether something happened last week or last month. The days are no longer distinct in your mind. That's time (or "the days") folding into itself.
