Xi'an , the most famous capital of ancient China, was built over 3,000 years ago. Not only does it have a lot of heritage and old buildings, which attract tourists from all around the world, it is also famous for its tasty food, especially a variety of noodles. Its nickname is 'the kingdom of carbohydrates,' because most of the people who live here eat noodles at every meal. Noodles are rich in carbohydrates, which provide enough energy for people. The noodles in Xi'an are very different from those in other areas. They are usually very wide. We roll the dough into a big flat piece, cut it into smaller pieces, then stretch it.
