Tomorrow I will go to buy the gift for my son's birtday.
Instead Sunday I will eat at the restaurant. I have booked the restaurant two weeks ago.

son's birtday. This Sunday I will eat at the restaurant instead. I made the reservation for it two weeks ago.
I wasn't sure about the "instead" part of your sentence, usually you would say for example "i will eat at the restaurant instead of at my house" for these types of sentences, but everything else was really great! Hope this helps🍀
