It was sunny today. After school, my mom took me to a newly opened restaurant. It had a setup similar to a conveyor belt sushi spot, but with a fun twist: instead of sushi, the belt carried an endless variety of premium mini hot-pot ingredients. We sat at the counter, each of us with our own tiny pot, and just like at a sushi restaurant, we could grab whatever dishes caught our eye as they passed by. The whole experience reminded me of that famous sushi place with the lottery-style game where certain dishes trigger prizes, though sadly, this restaurant didn’t have anything like that. I wish they do it in the future.

Beautiful writing! The only thing I would adjust is using "I hope" instead of "I wish." This is because wish is more for things that are impossible like "I wish I was taller!"
