My hometown is in Hiroshima prefecture. It is famous for sake(酒) there. So our town have many sakagura(酒蔵) which means sake brewery.
From a long time ago people had made sake with good rice,clear water and cool air. Hard water is suitable for making sake, but in Japan there are a lot of soft water. It’s difficult to take hard water because of geological features. But one sake expert in Hiroshima discovered how to make sake with soft water.So now we can enjoy drinking sake with soft water!
