Are both sentences OK?
I can't hear well in my left ear.
My left ear doesn't hear well.

in the 1st sentence “in” means inside so it sounds like you said “i cant hear well inside my ear”. It would sound better to say “I can’t hear well with my left ear.
The second sentence would sound better if you change doesn’t for can’t, overall both are right
