Is it ok to say ‘We held a theme event to learn from Chinese astronauts’ spirit’?

It’s unnatural enough that its meaning is unclear. The meanings of both ‘theme event’ and ‘astronaut’s spirit’ are rather unclear. And normally there would be a ‘the’ before ‘Chinese astronauts’.

Yes. There should not be an apostrophe after “spirit”.
