If I want to praise sth. (e.g. a book) in Mandarin Chinese and say "excellent!", can I use "优秀 - yōuxiù ? If not, what word/ expression would be better?

Yes, you can use 优秀 to praise something in Mandarin. You can also use 很棒,很赞,很好.... to praise.
