Geen is used when you’re negating a noun without an article or with an indefinite and niet when you’re negating a noun with a definite article, a verb, an adjective, an adverb,a pronoun,a preposition or even a whole sentence.
In this sentence it should be „Ik spreek geen Nederlands” because you’re negating the word “Nederlands”.
