Dear Isabel,
There are different ways to answer that question. To keep it simple, I would choose this:
"My favorite food is fish. I like *(1)*it because *(2)*it is *(3)*a fresh, healthy and delicious meal."
*(1)* The verb 'like' needs to have an object after. You can repeat the word 'fish' or you can say 'it' as a substitute.
*(2)* In Spanish the subject is found in the verb (for example 'quiero' - 'I want'). However, in English the subject is never in the verb. For this reason, you must always say who/what the object is, or it is difficult to understand who/what is responsible for the action.
*(3)* (i) In English, we have nouns which we can count (for example 'chairs') and nouns that we cannot count (for example 'water'). 'Meal' can be counted (for example 'I eat three meals every day'), so when it is singular, we need to use 'a/an' to indicate that it means 'one'.
(ii) In English, it is easier to list the adjectives before a noun, rather than split them before and after.
However, you can also use the same sentence as 'Andy IELTS Interview' wrote before. In fact, his is a bit closer to what you originally wrote, as it is a bit more complex.
