What does 'staggering' mean in this context?

Jane is correct. But the use of staggering also emphasizes that it’s kind of overwhelming. Like an overwhelming amount of different species.

In this context it means a lot. To paraphrase the idea ie. say it in a different way, you can say
"There is a huge variety of species" or 'There are many species and ...."
