Why it is OK to say: on Friday, this Friday but not OK to say on this Friday ("this" or "on", not both) while it is OK to say on this day (both use in the same sentence).

Sometimes there is no explanation.
Grammar is just a description of what most native speakers say and write. This changes over time and may vary by region. For example, Americans say "on the weekend" and British says "at the weekend."
