“roll onto one‘s back”,what does it mean?Can I simply say “roll one’s back”?

No. If say "roll one's back" that would mean you are rolling your back. Like rolling it into a ball. If you roll onto your back, it has a completely different meaning. In smaller sentences words hold the sentence together stronger so when you take one away it changes the sentence completely.
