How to spell German - ich?
I know there is two ways to read "ch". Like "ish" and "ich". What is the best way?

It is pronounce "ich". It is NOT pronounced "ish".

If you are talking about the German pronoun "Ich", the closest approximation would be the Russian "х", maybe "ых". It's a hard "h", not like the Russian "ш". Furthermore, I am not aware of a language where "ch" is pronounced like "sh" (or ш).
