What's the different between 'the artists' and 'artists'?

"artists" without "the" means any artists, undefined artists. With the article "the" they become some defined group of persons (with whom or about who You are talking) or artists as all persons of this profession all over the world.

If you are talking about a specific group (of artists) then you use "the". Artists on its own is very general.
