What do you call the daughter of the uncle? Is it "cousin"?

Yes it is. A first cousin is any daughter or son of your aunt or uncle. We also have second, third, etc. cousins who are, collectively with first cousins called cousins.
A second cousin would be, for example, your first cousin's child.
