You can't say 'popcorns'. The plural of 'popcorn' is still 'popcorn'.

Yes, popcorn is uncountable. You could say "I have a bowl of popcorn." (plural) or "I have a kernel of popcorn." (singular) or "I have popcorn." (plural), but "I have a popcorn." is not used.
