how may i use the verb "to woo" without being disrespectful or rude?
im a vet; I Found this word in one of my books; may I use this word when I speak about human behavior?

"To woo" would not be rude, but it would seem a little strange to use. It is outmoded and very seldom heard, except in historical romance novels.
You would more likely say that you are dating or seeing some girl than wooing her.
