The correct usage is 'I saw a black and a white horse' or
'I saw two horses, one was black the other was white'.

You should say " I saw a black and a white horse." You actually saw two horses and should have said "I saw a black (horse) and a white horse. Otherwise, if you saw one horse with two colours you would have said,"I saw a black and white horse.Okay? I hope you can see the difference.
