What does mercy mean in this sentence " I saw the monkeys-mercy, how unpleasantly they smelt"

The hyphen should be a dash. "Mercy" is an exclamation or interjection, also sometimes seen as "mercy me!" or "have mercy on me!". The speaker is emphasizing how bad the monkeys smelled.
