As it stands your sentence is incomplete.
For example you could write: The production and publishing of books/articles/essays about knowledge attained by young children.
OR
The production and publishing of research papers/essays/articles about the development of cognition in young children.

Knowledge is publishable but not cognition, which is a mental process.
I would go with either "knowledge production and publication" or "knowledge generation and dissemination".
