I would like to know if there is the form: la ratón or el jirafa?

Puedes decir: el ratón macho = el ratón; el ratón hembra = la ratona. El ratón, la ratona.
Jirafa es un sustantivo que tiene la misma forma para ambos sexos: la jirafa. Para identificarlos tienes que agregar la palabra "macho" (masculino) y "hembra" (femenino): la jirafa macho o la jirafa hembra.

"Ratón" (masculine) and "Jirafa" (feminine) have no other name in Spanish for masc. / fem. Then, to differentiate male / female you should add the word "macho" (male) or "hembra" (female) as in your example: "ratón hembra" or "jirafa macho".

No puedes decir "la ratón" o "el jirafa". El género del artículo debe coincidir siempre con el del sustantivo. "Ratón" es masculino y "jirafa" es femenino.
