A pomegranate or some pomegranate? Is it countable or uncountable?

It could be either, however 'a pomegranate' implies that you want a whole pomegranate, and 'some pomegranate' implies you only want some. If you wanted more than one pomegranate, then you'd say 'I'd like some pomegranates.'
