Both are correct depending on what you are suggesting about the amount of water/sweat.
A mop is used to wash the floor or clean up large spills of liquid thus if someone is mopping the sweat from their face, they must be sweating profusely.
If they are wiping the sweat from their face, they aren't necessarily dripping with it; there could be just a little.
