I've been learning formal speech, but what is the difference between 에요 and 예요? and how do I tell the difference between the two?

Consonant + 이에요
Vowel + 예요
Consonants are: ㄱ ㄲ ㄴ ㄷ ㄸ ㄹ ㅁ ㅂ ㅃ ㅅ ㅆ ㅇ ㅈ ㅉ ㅊ ㅋ ㅌ ㅍ ㅎ
Vowels are: ㅏ ㅐ ㅑ ㅒ ㅓ ㅔ ㅕ ㅖ ㅗ ㅘ ㅙ ㅚ ㅛ ㅜ ㅝ ㅞ ㅟ ㅠ ㅡ ㅢ ㅣ
Examples:
물+ 이에요 = 물이에요 //// 물 ends with the consonant ㄹ.
김치 + 예요 = 김치예요 //// 김치 ends with the vowelㅣ.
