"Saisir" is more like "to handle". there are subtilities between those 2 words, depending of context and what you want to say you would use one or the other.

"saisir" also mean "understand" because we can ctch the meaning of something and then we can say "j'ai saisi ce que tu m'as dit", for example.

"Saisir" can (most of the time) be translated as "to grab" as it emphasizes on the hand catching something.
"Prendre" can be translated as "to take". It can be used in a lot of ways, like in English:
"prendre une douche" (to take a shower) etc.
