Is T held at the end of a word? I read in the book American Accent Training that T is held at the end of a word. Will this rule apply to every case? Does it mean that none of the Ts will be pronounced in this example? 'She hit the hot hut with her hat.'

If by "held" you mean it's unvoiced, then yes, it's very common in American accents and the Ts in your example are unvoiced.
