All very similar when verbs.
Arsenal FC beat Liverpool FC 2-0. Used more often in competition or games
The German army conquered Poland. Used more in military and battles
My wife is always right, I must always admit defeat. Used in any instance to describe a victory over someone or something.
In short, beat & defeat will be used often in everyday language. Conquer is a bit more specific but still wouldn't be wrong to use outside of a military context.
