"take your time" can be translated as: "fai con calma", "fai tranquillo", "fai con comodo or "prendi il tempo che ti serve".
"take care" can have 2 meanings:
1) be cautious: "fai attenzione", "stai attento", "mi raccomando".
2) wish you well: "stammi bene", "in gamba!" (informal) or "prenditi cura di te stesso" (more formal, but less commonly used).
