Dos cafés. Aunque café como "producto" es incontable, café también equivale a taza de café. Por eso decimos dos cafés (dos tazas de café)

Tienes razón. Cuando oyes: "Dos cafés solos" es muy difícil entender como se escribe.

A veces, when natives speak Spanish, they will pronounce suffixes very lightly :) So maybe you heard that happen ;)
