This is not an easy task as he thinks.
Is that sentence grammatically correct? If so, does it mean that he think it's easy or not? What if a comma came before "as"?

The more common way of expressing the idea would be like this:
"This is not as easy a task as he thinks."

That's not quite right, or perhaps just awkward. Bruce's sentence is great, or you could say, "This task is not as easy as he thinks."
