Can I use "such as" and "etc. " together
ex. I enjoy eating vegetables, such as carrot, tomato, and cucumber etc.
Q: can I use "etc" at the end of above sentence, if cant, Where and how can I use it?

Yes, you can use it. It would be correct like this: I enjoy eating vegetables such as carrots, tomatoes, cucumbers, etc.
