Habías dicho / dijiste I heard in a movie this sentence: "Pensé que habías dicho que era retornable". Is it correct another one construction: "Pensé que dijiste que era retornable"? If it is correct, what difference is between those two sentences?

An easier, less technical explanation: "dijiste" is pointing more into the past than "habías dicho", which is a past form but more recent. Also, in some areas people tend to use compounds forms (auxiliar verb + verb), and in some other they almost always use simple forms (without the auxiliar verb).

Las dos expresiones indican pasado. Dijiste: Pretérito Perfecto Simple se circunscribe a acciones de un pasado indefinido, o concluido y no ligado al presente. Habías dicho: Pretérito Pluscuamperfecto sirve para expresar la anterioridad de un hecho pasado respecto a otro también pasado. Con habías dicho, estamos haciendo referencia a algo hablado con anterioridad. espero que esto te aclare algo, saludos.
