When do I use 오늘은 and when do I use only 오늘?
Can someone give me some examples please? :)

They're are same. You can choose one you want. ^^
For instance,
오늘(or 오늘은) 무엇에 대해 배워볼까요?
오늘(or 오늘은) 무슨 요일인가요?

오늘 can be used as noun or adverb.
오늘은 is composed of 오늘(noun)+은(topic marker)
오늘은 can be replaced with 오늘 in conversation.
But 오늘 used as adverb cannot be replaced with 오늘은
1. noun
오늘이 첫 출근 날입니다.
오늘부터 열심히 공부할 것이다
오늘(은) 날씨가 덥다.
오늘(은) 마음껏 놀아보자.
2. adverb
그가 오늘 왔다.
오늘 해야 할 일을 다음 날로 미루어서는 안 된다.
