In Spanish we say " do routes by bike"
Is it correct in English?
I mean in the forest or countryside.

No we would say something like the following,
I cycle in the forest, or I cycle through/on the forest trails. I use the forest trails.
I cycle in the countryside. I use country paths to cycle on. I cycle through the countryside. I use country paths/trails.
