They are often interchangeable, but there are certain expressions that go with one rather than the other. For example you speak a language. Also, speak is a little bit more formal. Hope that helps :)

Talk is a two-direction conversation, for example with your friends. Speak is a one-direction conversation, for example a lecturer or radio presenter.
