'' I said that she is beautiful'' or '' I said that she was beautiful'' Which one is correct?

It could be either.
If you use "She is beautiful" then you are saying that the person is indeed beautiful, etc.
If you say "she was beautiful" then you are saying that she no longer is beautiful.
Or you could say "she was beautiful" in reference to a deceased (dead person).
example: She was beautiful until she cut her hair and now she looks ugly.
example 2: I remember Johns wife, she was beautiful and will be missed.
