'Can you read the minutes of the last meeting?'
The minutes of the meeting is the official written record of a meeting - 'el acta de la reunión' in Spanish.
One person is asking the other person to read through the minutes, perhaps to check that the details are correct. Or perhaps the other person wasn't present at the meeting and needs to read the minutes in order to find out what happened there.

"Can you read the minutes of the last meeting" is the same as "Can you review the minutes of the last meeting".
I would not use "resume" in this context (if I have understood the question correctly).
