The word that has been omitted and replace with 'everything' is 'shit: it's a common phrase used to express the idea of everything going wrong. It's usually 'when the shit hits the fan', quite literally it reflects the image of poo being sliced by a fan's blades and being blown over everything; spreading over everything. That's just a physical way of explaining it.
