Can I say " Please remember me to your parents" to my leaving friend if I've never met his parents? If I can't, what should I say to express this meaning? Thank you!

I agree with Adrian's suggestion. Unfortunately, "remember me to (someone)" doesn't exist in English, and so the phrase sounds very awkward. As a verb, "remember" doesn't work in that way.
