Is "less" exchangeable with 'except' here? "Normally the stock valuation rule would be that market value in this context means selling price less the costs of selling the product"I mean if "less" is interchangeable with "except" in the above?

A better synonym is "minus". "Except" doesn't give an accurate meaning in the sentence.
