why not чая?why not genitive?

В разговорах вопрос задают и такой (можете говорить и так). Точно так же форму "чаю" можно употреблять с совершенными глаголами (выпить, попить). Но если употребляете несовершенный глагол "пить", нужно использовать именительный падеж, поэтому:
Я не пью ни чай, ни кофе.

Both are correct. Same rule applies to pairs сахара/сахару, бензина/бензину, кваса/квасу, etc. That's a rare example of partitive case in the Russian language. (Yes, there are more than 6 cases in Russian, but they are not taught at school, used very rarely, and very few native speakers other than professional linguists know about them).
