How is "next Monday" different from "come Monday"?

"come Monday" is a colloquial usage : "Come Monday we'll see what happens" meaning 'We'll see what happens on Monday'. The Monday to which it refers is probably, but not necessarily, next Monday.

Did you mean "coming monday"? If so, they are same.
