What does the "Se" in "Se escapó" mean?
I know all together it means he escaped, but wouldn't it be "él escapó", thank you.

It's a personal pronoun which is used with a pronominal verb when the subject is the third person:
El se fue/ se fue
Ella se asustó/ se asustó
Ella se sentó/ se sentó
Etc.....

"Él" escapó= "He" escaped.
"Se" escapó = "He/she/it" escaped.
