What is the difference between string and chain?

A string consists of fibres woven together.
A chain consists of hard interlocking links. They are usually metal, but can sometimes be plastic, or any other solid material.

String: Woven or threaded together. Cotton, nylon, silk.
Chain: Connected or attached identically together one after the other. Technically speaking with medals and steel.
